Argan oil and Za’atar Bread

For a recent Moroccan themed night with friends i was asked to bring along one of my loaves of bread, and so wanted to make it Moroccan inspired, I had recently treated myself to a bottle of Argan Oil from Arganic and thought this flavoursome nutty oil from Morocco would be perfect teamed up with some Za’atar, which is a blend of oregano, thyme, sesame seeds and sumac as a topping for a foccaccia style loaf.

Using the Overnight Sponge Recipe I drizzled the bread with the Argan oil and sprinkled with Za’atar before going into the oven.

The taste was herby and nutty and went perfectly with a Lamb and Apricot Tagine and some wonderful dishes provided by other friends.

Definitely worth a try as an alternative to rosemary and sea salt.

    Insh’Allah I will be going to Syria next month. If & when we get back to Wales I will try to bring you some Syrian zataar. There are 2 types, the green one for putting on baked flat breads and the brown one used for dipping in zait zaytoon (best stuff is from Idlib)

    I was inspired by your steaks last week, so I cooked a piece of flank dirty style 2 days ago, it was amazing, maybe more taste than a rib eye. This week I plan to do a brisket and some jacobs ladders in a Primo Grill, this time with a bit of injected marinade in the brisket and maybe only 12 hours cooking to get it a bit more moist.

    Only 3 more hours to go now to iftar, I have some marinaded chicken wings to grill, with pembrokeshire new spuds that have just started and tabouleh. Yum Yum

    • Wow, thank you my friend, I first tried it cooked on bread by a Lebanese chef in the middle of Nigeria and it has always been a favorite ingredient of mine.
      That’s really kind of you, I love the stuff.
      Glad you tried and enjoyed the dirty steaks, I love flank and skirt such flavoursome cuts if cooked right.
      Look forward to seeing some pics from you on these.
